Kids-Approved Potato Soup

It’s so much fun to cook with the help of a good kitchen machine

Today I made a potato soup from my Thermomix recipe book. I can’t say it often enough how much I looove that kitchen machine. It is like having all kitchen gadgets in one single appliance and it is so much fun to cook with it. Yes, you heard right, FUN! Cooking isn’t always fun, but with the Thermomix it’s guaranteed.

My own kids like to use it as well. My daughter would make smoothies and ice cream with it and my son likes to mix and heat vanilla milk in it. Kids just love that kitchen gadget!

It is manufactured by Vorwerk a German company established in 1883. They started producing the Thermomix since 1971. The sale takes place via home promotional events similar to Tupperware.

So back to the potato soup. They somehow manage that all the recipes from their books taste very good.

My children are often picky about food and its consistency, but they really like that potato soup.

The advantage of the Thermomix is that you prepare, cook and puree the soup completely in that machine without using a pot or stove. You can also cook the soup on the stove and use an immersion blender.

Health Benefits of Potatoes

Potatoes are a very good source of vitamin B6 (which is essential for the formation of virtually all new cells in the body) and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid, as well as a variety of phytonutrients that have antioxidant activity.

Potatoes are classified as “nightshades” and sensitive persons might feel improved symptoms by avoiding them.

Kids-Approved Potato Soup

Serves: 3-4
Cooking Time: 30 minutes

Ingredients

  • 1 carrot
  • 200g celeriac root
  • 400g potatoes
  • 500ml water
  • 1 tsp salt
  • 50g onion
  • 20g butter
  • 200ml broth
  • 50g heavy cream
  • ground pepper

Instructions

If you would like to have some diced vegetables in the soup, take the carrot, 100g potato and 200g celeriac root, dice finely, steam/boil (save the water!), and set aside for later. If not, chop roughly and add to the pot in step 3.

Heat butter in a soup pot and briefly soften the chopped onion.

Peel and cut the remaining potatoes into pieces add to the pot, pour in 600ml liquid consisting of the remaining water which you have saved from steaming the diced vegetables, additional water, and broth.

Optional, replace the water with more broth.

Cook until potatoes are soft.

Carefully puree the soup with an immersion blender.

Add heavy cream and ground pepper and briefly blend again.

Stir in the diced vegetables until warm and serve with your favorite toppings.

Notes

Optional but very recommended! Top with bacon and sour cream. ENJOY!
