Sometimes good things happen when you throw a bunch of ingredients into a food processor and pray!  😀
Where we live it starts in late September that we have already cold temperatures in the mornings and it just feels better to start the day with a warming breakfast.
Since I prefer to skip the dairy and grain in our diet as often as possible, I am very pleased with that porridge recipe consisting mainly of nuts, seeds, and egg.
As always I like versatile recipes, and since fall is the time of pumpkin and spices, I gave this warming breakfast bowl the taste of fall.
I used cashews, almonds, sunflower and flax seeds as my base and used pumpkin puree and spice for taste.
Chop nuts and seeds into little crumbs. I actually put all the ingredients into my food processor at the same time and it turned out well. If you buy canned pumpkin, choose Organic Pumpkin Puree instead of Pumpkin Pie Puree since it contains usually more sugar and other ingredients.
As the liquid ingredient, I used water, but you can literally choose any kind of milk or juice (dairy, nut or seed milk, apple juice) or whatever you prefer.In this recipe, I added half of a banana for sweetness, but you can add more fruits as a topping or drizzle some honey or maple syrup over it if you like it sweeter.
The egg provides extra protein, nutrients and helps to thicken the porridge.
The consistency is rather thin in the beginning, but don’t worry it will thicken after a while. Keep stirring…

Warm Breakfast Bowl grain-free
Ingredients
- 1 cup water
- 1/8 cup cashews
- 1 tbsp sunflower seeds
- 1 tbsp flax seeds
- 1 tbsp almond meal
- 1 tbsp pumpkin puree
- 1/2 banana
- 1 egg
- 1/2 tsp pumpkin spice mix
Instructions
Put all the ingredients in a food processor and chop to preferred consistency
Pour into a little pot and heat until the mixture starts to bubble
Turn off the heat and stir until it thickens to porridge consistency
Top with chopped nuts and apples
Drizzle some raw honey or maple syrup over it
Enjoy!
