Banana Oat Pancakes

Have you ever noticed that bananas make you feel happy?!

When my kids were toddlers we used to call bananas “happy banana” or an egg a “happy egg”. I could literally watch how their grumpiness or mood lifted after enjoying one of these foods. I remember, one day when we were outside we saw a little child which was crying and having a tantrum. My son said: “That child needs a banana”.

It was a funny moment because that wasn’t a saying from me. From that time on we were more aware of how food can make us feel.

I guess you can be sure this recipe does not only taste good it will also make your child happy!

What’s so healthy?

BANANAS

A medium sized banana contains around 3 grams of fiber. Fiber is a nutrient that helps regulate digestion which has an impact on how fast sugar gets absorbed into the bloodstream. Bananas contain pectin, a water-soluble fiber which offers additional glucose balance because it increases with ripeness same as fructose.

Bananas also contain fructooligosaccharide (FOS) a prebiotic, which is known to feed our friendly gut bacteria and we all know by know how a balanced gut flora influences our mental health.

The happy feeling which comes after eating bananas might be due to high levels of tryptophan, which is converted into serotonin – the happy-mood brain neurotransmitter. Bananas are also a very good source of vitamin B6 which balances our nervous system.

OATS

Oats are not only a good source of fiber and therefore good for digestion it is also a very good source of manganese, a mineral which is needed for healthy bones, skin, blood sugar control and free radical defense.

EGGS

Eggs contain fat-soluble vitamins A, D, E and K. Healthy omega 3 for brain health and the antioxidants lutein and zeaxanthin which are essential for good vision. Folate, choline, and B12 are very well known for their important role in brain development and a healthy nervous system.

Not sure what to pack for school lunch?

These pancakes can be packed very well as a school lunch. They taste good warm and cold and you can use one of these tiny jam jars to fill in some maple syrup.

Banana Oat Pancake

Serves: 6 pancakes
Cooking Time: 5 minutes

Ingredients

  • 1 banana
  • 2 eggs
  • 2 tbsp rolled oats, gluten-free
  • optional, cinnamon
  • 1 tsp ghee or coconut oil for frying

Instructions

In a wide and shallow bowl or soup plate, use a fork to mash and combine banana, eggs, and oats.

Add cinnamon, optional.

Let the mixture sit for 5 minutes to soften the oats.

Heat a pan over medium, add ghee or coconut oil and fry pancakes on both sides.

Wait until they firm up before you flip them onto the second side.

Optional, sprinkle with coconut flakes and drizzle maple syrup on top.

Notes

The pancakes have a slightly sweet taste from the banana. I used to serve them without any additional sweetener, like maple syrup, when my kids were little.
