Homemade Caesar Salad Dressing

Kids looooove Caesar Salad!

It might be the perfect match of crunchy salad and creamy, dip-like dressing which makes it the perfect salad for children.

Believe me, there is no need to buy a Caesar salad dressing from the store. It is done in no time, is a lot more nutritious, doesn’t contain any nasty ingredients, because it is freshly made!

As always I focus on nutrient-density

This homemade Caesar salad dressing contains all the amazing nutrients from egg yolk, anchovies, and apple cider vinegar. It is made with olive and avocado oil to give it a lighter taste. Also, the yogurt gives this dressing a fresh and light taste.

Anchovies are not only rich in omega 3 fats, calcium, iron, and zinc, they also completely dissolve in this dressing. What remains is a perfect flavor…

Furthermore, I added a little bit of Kimchi juice to increase the probiotic content. Kimchi is a staple in Korean cuisine, and a traditional side dish made from salted and fermented vegetables. Due to fermentation, it is rich in probiotics (healthy bacteria), which are beneficial to optimize digestion, gut health, mental health, and immunity.

To increase nutrients in the salad I mix a little bit of thinly sliced fresh bok choy or some baby arugula into the romaine lettuce. Bok choy is a cruciferous vegetable, such as cauliflower, broccoli, cabbage, and Brussel sprouts, which I prefer to slice into salads because it is a highly nutritious vegetable with a very mild taste.

As a protein source, I added quickly fried chicken breast pieces spiced with a little bit of paprika powder, curry, salt, and pepper. Every meal and snack should contain protein. Many bodily processes rely on protein, especially in growing children. It is needed for muscle repair after athletic activities and helps regulate blood glucose. Hormones, enzymes, and our immune system rely on protein. (1)

I prepared some bacon and used it as an additional topping because who doesn’t like bacon!? Some grated Parmigiano goes very well on a Ceasar salad too.

You can also bake or fry some diced bread pieces to make croutons. Since I personally try to skip the bread as often as possible we skipped the croutons, and because we had crunchy bacon pieces on top nobody really missed the croutons.

Homemade Caesar Salad Dressing

Serves: 4
Cooking Time: 15 minutes

Ingredients

  • 1 egg yolk
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tbsp apple cider vinegar
  • 1-2 anchovies (or 1 level tsp anchovy paste)
  • 1 tbsp yogurt (try to find grass-fed/organic, skip for dairy-free or replace with 1/4 avocado)
  • 4 tbsp olive oil
  • 4 tbsp avocado oil (I like to do half/half because some olive oils have a strong taste)
  • optional, 1 tbsp kimchi juice
  • optional, garlic
  • salt and pepper to taste

Instructions

Use a Nutribullet, Immersion blender or hand mixer. Something with which you can mix small quantities.

Add all ingredients.

Blend until the dressing increases in quantity and turns into a creamy consistency. This might take 3-5 minutes.

Use immediately or store in the fridge.

Due to the raw egg yolk, I wouldn't store it for longer than 2 days.
